Rest Day Recipe: Avocado Toast with Smoky Tempeh

Today’s Rest Day Recipe is more of a quick breakfast or anytime meal. As with many of my favorite meals, this one can be altered easily using ingredients you have in your fridge without changing the spirit of the meal.

There are two variations of smoky tempeh you can use depending on your ambition and time. The tempeh can also be swapped out for sliced, marinated tofu, if you prefer.

Eziekel muffin with avocado and smoky tempeh

Ingredients

  • Eziekel English Muffin or 2 slices of your preferred bread
  • ¼ avocado, mashed
  • 3 slices of Lightlife Tempeh Smoky Bacon or approx 3oz of homemade smoky tempeh
  • Rainbow sprouts or cilantro microgreens, rinsed and drained well
  • Everything Bagel Seasoning

Build your toast

  • Toast Eziekel muffin or bread
  • Brown tempeh in pan over medium heat. Then set aside.
  • Divide avocado between the bread/muffin slices and spread evenly on each piece
  • Sprinkle Everything Bagel Seasoning on the avocado
  • Add sprouts or microgreens
  • Divide warm tempeh evenly and lay over sprouts

Homemade Smoky Tempeh

Marinade ingredients for ⅓ package of plain tempeh (approx 3oz)

  • 2 tbls coconut aminos
  • 1 tsp Liquid Smoke
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp 100% maple syrup

Marinade Instructions

  • Whisk together all marinade ingredients in a glass dish. Preferably one with a secure lid.
  • Slice plain tempeh into thin strips. They should be thick enough that they do not crumble when slicing.
  • Add sliced tempeh to marinade and coat pieces well. 
  • Cover dish and marinate for approximately 15 minutes. Then, use as above in toast recipe.

Tips

  • There is no need to marinate the tempeh for much longer than 15 minutes. The thin slices pick up and hold the flavor quickly. Marinating overnight makes for extremely salty tasting tempeh.
  • Dab the sprouts between a couple of paper towels if they are too wet after rinsing. You don’t want soggy toast.
  • If you have a ripe avocado there is no need to dirty a bowl to mash it. Just slice the avocado and put the slices on the toast. Then use a butter knife to “chop” up the slices and mash it right on the toast.
  • Don’t forget the Everything Bagel Seasoning! It gives the avocado toast an extra boost of flavor. I get mine in a big container at Costco.
  • Steamed curly or red kale with 1-2 teaspoons of balsamic vinegar makes a great side to this healthy breakfast.
