Rest Day Recipe: Protein Boost Peppermint Mocha Chicory Root Tea

There’s nothing like a nice warm beverage on a chilly winter night but who says it needs to be full of sugar and cream to be inviting and satisfying? This is one of my favorite drinks when I’m looking for an after dinner dessert or coffee substitute in the evening. It’s caffeine and sugar free but sweet tooth satisfaction all the way. The protein powder adds to the creamy texture and combined with the fiber from the chicory root, this is a very filling drink.

Protein Boosted Peppermint Mocha Chicory Root Tea

Ingredients

  • 1 rounded tsp of Chicory Root powder
  • 1 rounded tsp of cacao powder
  • ½ – 1 serving of unflavored protein powder (I use this hemp powder)
  • 5 drops of peppermint extract
  • Lite coconut milk to taste depending on your creaminess preference
  • Hot water

Directions

  • Heat water in a tea kettle or pot on the stove.
  • Add chicory, cacao and protein powders to a large mug.
  • In a separate mug, add coconut milk and peppermint extract together. Heat in the microwave or in a small pot on the stove until warm but not scalding hot.
  • Using a milk frother, bring the warm coconut milk to a bubbly froth. Then, add to the large mug containing the powders and mix again with the frother.
  • Add the hot water to the large mug and mix gently with a spoon.
